specialty tours/Italy

Going to be in Italy in June 2005. Looking for Specialty Tours that can be booked w/o the whole trip being pre-planned. Looking for olive oil manufacturing, glass blowing, vinegar production, truffle hunting, ceramic making, etc. tours for about 10-15 people. Any contacts?
