self drive vs. guided tour

My husband and I are planning a trip to Ireland for August for about a week (7-8 days). . This is our first time to Ireland. We are torn between booking a guided tour (such as CIE's heritage) or doing a self-drive tour with B&Bs. I am looking for feedback on the advantages and disadvantages of the two options.

I also have some questions about the self-drive:
How easy is it to navigate your way around?

Are the country roads difficult to drive on (I heard they are narrow and winding and you never know when there might be a flock of sheep around the bend)?

How much pre-planning is required so that we don't loose time trying to figure out where to go and what to do?

any recommendations on where to go and what to do?

any input is much appreciated.
